海参营养丰富,以食疗双佳被奉为上品,因此深受国内外消费者喜爱。实践证明:用热泵干燥法干燥海产品,不仅可节能近5O%,而且可大幅度提高其品质及附加值。本课题拟用热泵干燥技术对海参进行加工,通过实验研究确定海参热泵干燥的预处理方法和干燥工艺流程。
本文首先对热泵干燥技术和海产品干燥方法在国内外的研究进展做了详细汇报。确定了研究内容和研究方法。
其次阐述了热泵干燥系统的工作原理,初步建立了热泵试验平台。
在次本文进行了海参热泵干燥的特性试验研究。试验结果发现试验箱体内的相对湿度越大,海参的干燥时间越长;试验箱体内的风速越大,海参的干燥时间越短;海参的个体越小,海参的干燥时间越短。同时本文也对海参的收缩率和复水比进行了计算分析,分析结果发现海参的终了含水率了直接影响到海参收缩率的大小。通过复水比曲线我们可以看出在前几分钟内曲线成上升趋势,随着时间的增加海参吸水量逐渐减少,曲线成平稳下降趋势。
