制作“姜撞奶”的原理:
姜撞奶主要是依靠姜汁和牛奶在一定温度范围(40度-100度)内发生化学作用,使牛奶凝固制作而成。传统的制作方法中撞的步骤是为了让牛奶的温度稍微降低,使成品口感更好。
材料——在市场买新鲜水牛奶(1斤能做出2碗半)、鲜榨姜汁(没有机器,可现磨再隔汁的)、糖。
做法——煮牛奶+糖,煮开后(一定要把水牛奶煮开)关火,放凉30秒后倒入已有姜汁的碗中,约10分钟左右就能凝固。接下来不用教了吧 。
提示——1、要用新鲜水牛奶,试过用盒装伊利纯牛奶,两次都失败!
2、要用新鲜即榨的姜汁,试过用隔夜的姜汁,失败!
3、如有温度计就是在牛奶煮好后于70—80度的时候倒入姜汁中。
