随着人们生活水平的提高,生活节奏的加快,快餐业取得了持续快速地发展。然而目前国内快餐市场仍是西式快餐占据主导地位,中式快餐企业在发展中存在许多问题,如生命力短、易被模仿和被替代、产品质量不稳定、标准化程度低以及连锁经营发展缓慢等。解决现代中式快餐业存在问题的关键就在于建立起长期竞争优势,形成自己独特的核心产品和技术。核心竞争力理论为解决现代中式快餐业面临的问题,提供了强有力的支持,核心竞争力本身就具有独特性、价值性、不可模仿和不可替代性、延展性等特点,这正是建立企业长期竞争优势的源泉和动力。本报告首先阐述了核心竞争力理论,分析了核心竞争力的概念、特点以及如何提升企业核心竞争力,在此基础上以麦当劳、肯德基两大代表性西式快餐企业以及真功夫、合和谷两家经营成功的中式快餐企业为例,分析了促进其餐饮企业取得成功的管理理念与方法,然后结合核心竞争力的概念与特点,从案例中得到启示,找出快餐企业的核心竞争力,最后为提高中式快餐企业核心竞争力提出了一些建议。本论文为中式快餐企业品牌的建立、管理的理念与经营的发展提供了参考。
