可以说I taught myself a number of extra courses which were beyond the class.这样意思可能比较明确，self-educated是自修的自学的，这样用可能不太适合，特别是主语是物的情况下...

除了必修课之外, 我还自学了其它课程.

个人觉得, "class"不适用,它的主要意思是班级,年级,(一节)课....."course"才是课程. "许多"这个词在这不必译出, 用"其它"一词就够了
