The steady-state formation of sorbitol by cathodic reduction of glucose was studied in a parallel-plate reactor of 200 cm z electrode area. Earlier work was extended to explore the effect of flow rate, pH and current density. The effect of temperature between 20 ~ and 47 ~ C and the use of amalgamated lead as compared with chemical lead and other metals is discussed. It is shown that addition of Zn ions accelerates the reaction and the reasons for this are discussed. The implications for industrial application are considered.
