一、《黄帝内经》关于食疗的基本原则
1、五味调和以养五脏

《素问•脏气法时论》指出:“肝欲散,急食辛以散之,用辛补之,酸泄之…心欲软,急食咸以软之,用咸补之,甘泄之,……脾欲缓,急食甘以缓之,用苦泄材补之,以上都是不同性味食物,顺其五脏之所喜好,顺其喜则为补,逆其好则为泄.因此,在运用药膳时,必须根据药膳的性昧、功效、补泻调和而食之,才可取得良好的效果。
3、寒温调和以养五脏
《内经》认为,人体五脏功能协调,在整体上就表现出“阴平阳秘”的健康状态。如果五脏功能失调,则整体上会出现"阴阳失调"的疾病状态。因而在食疗原则上,《素问•至真要大论》指出:“热者寒之,寒者热之”,诸寒之而热者取之阴,热之而寒者取之阳,所谓求其属也。“治寒以热,凉而行之,治热以寒,温而行之”。这些寒温调和以养五脏的原则,对指导食疗有重要作用。
