我觉得选D，但是我又不知道如何在句子中区别it和that的用法

这句话是固定搭配。
由find引导的宾语从句，因为省略了that，所以it作为形式宾语。而后面的动词不定式是真正宾语。
It is或was+adj +for sb+to do sth。做某事对于某人来说是。。。
完整的应该是：I found that it was very difficult to understand people who speak fast.
