由样本参数推导总体参数的理论依据是什么？

是样本平均数抽样分布与总体分布的平均值相等吗？
就算是这样，每次抽样都只是样本平均数抽样的一个点，怎么能用这个点去估计总体平均数呢？
请高手解释一下，还是不明白啊！
