为什么这句要加where:
We've all used thermometers to measure temperature but sometimes we need to measure temperature in places WHERE you can't put a thermometer.

that可以用于表示时间、地点、方式、理由的名词后取代when, where, why和"介词+ which"引导的定语从句，在口语中that常被省略，例如：

这里的话where代替的是in which。 where 代替的是 places.
也就是说，原句应该是…… we need to measure temperature in places (which) you can't put a thermometer (in).
当后面有介词的时候，前面只能用which ,不能用that。如果用that，句子分开来后半句就是 You can't put a thermometer (places),有语法错误。
然后，当后面有介词时，可把介词提到前面,然后用when, where, why这样的词替代。所以，这题就变成 …… we need to measure temperature in places (in which) you can't put a thermometer .
也就是…… we need to measure temperature in places (where) you can't put a thermometer .
并且这里的where不能省略。
差不多是这样，如果有些语法楼主没有学的话，可以以后慢慢理解。但是，英语的从句不能只凭语感，各个替代词的关系和用法都要弄清楚，什么时候省略，什么时候不能用哪个，都有很多硬性规定的。
