that从句的简单问题~

that引导的什么从句中不能把that省略掉呀？
另外句子The next thing he knew it was 3:00 A.M.有语病没？

把it去掉就可以了，语法上就对了，但是前后不搭配啊！
The next thing was 3:00 A.M.（不通啊）
应该改为：
The time when the next thing happened he knew was 3:00 A.M.

能省略
没语病

The next thing he knew was that it was 3:00 A.M.
