摘要:本文主要以中低档绿茶为原料简单工研究了茶叶中的有效成分茶多酚、咖啡碱、茶多糖的复合提取技术以及超声波对绿茶中所含茶多酚等物质浸出的特性影响。建立了从同一茶叶原料中同时获得茶多酚、咖啡碱、茶多糖3种产品的工艺流程,从而充分利用茶叶资源,避免了单一成分分离而导致其他成分浪费的现象,具有重要的科研价值和经济价值。并通过仪器分别测定了他们各自在茶叶中所占的百分含量。研究表明它们具有抗氧化,抗癌,增强机体免疫力等功效,其百分含量分别占茶叶干质量的18%~36%,2%~5%,和0.5%~2%。
