摘 要:鱼内脏中含有丰富的内源酶,利用内源酶能够水解鱼蛋白。水解鱼蛋白营养丰富,可用于制作糊、调味品和汤料,也可作为食品蛋白质强化剂。本课题主要研究以淡水鱼(以鲢鱼为例)内脏下脚料为原料,研究时间、温度、pH对提取效果的影响;得到最适提取条件为:pH7.5、温度22℃、时间3h。对无机盐离子对酶的激活作用进行试验,结果表明0.01mol/L的K+能够提高27.8%的酶活力。同时研究其保存条件,结果表明4℃,20℃条件下保存的酶液都产生腐败变臭,而-18℃条件下保存18天酶活力基本没什么变化。。通过单因素实验和正交试验研究各种因素对自溶水解效果的影响,得到最佳水解工艺条件为:提取pH7.5、时间8h、料液比1:2.5、温度50℃。
