以粉碎后的蕨麻粉末为原料，探讨时间、料液比和温度对多糖得率的影响，在单因素试验的基础上，通过正交试验确定最佳提取工艺条件。结果表明：料水比対蕨麻多糖得率影响最大，其次为浸提时间，浸提温度对多糖得率的影响最小。蕨麻粗多糖的提取最优工艺条件为：浸提温度为90℃，料水比为1：25，浸提时间为1h，，其水溶性粗多糖提取率达5.772％。
