摘要：试验测定了分别为16个样本的背最长肌和腿肌进行肉质参数的测定。结果提示不同胴体部位对某些肉质参数有显著影响，与后腿肌肉相比，背最长肌系水力较好，肉色较浅，剪切力值较低。

Abstract: The experiment has determined respectively is 16 sample back longest muscles and the leg myo- carries on the pulp parameter the determination. The result prompt different dressed carcass spot has the remarkable influence to certain pulp parameter, compares with the hind leg muscle, the back most is long myo- is the water power is good, the yellowish pink is shallow, the shearing force value is low.
