传统的啤酒发酵工艺分为下面发酵和上面发酵两大类型,两者由于所采用的酵母的菌种的不同,其发酵工艺和设备条件均不相同,制出的啤酒风味也不同,一般说,下面发酵啤酒生产时间比较长;上面发酵啤酒成熟快,但保存时间短。近年来,在科学研究基础上,进一步认识啤酒发酵机理,改进了发酵工艺,采用了一罐法,简化了生产工序,前、后酵不再严格划分,缩短了生产时间;降低了生产成本和啤酒损失;节约了劳动力和清洗费用。然而,一项先进的工艺,必须要有先进的设备予以保证,才能实现。锥形罐就是目前采用较普通的适用于大容量的新设备, 它具有节省投资,操作简便,改善工人工作环境,能适应大规模生产等特点,在保证啤酒质量的前提下,它完全能满足快速发酵的需要。

Traditional beer fermentation processes can be divided into two categories: fermentaion from below and fermentation from above. The yeasts used in both processes are different, therefore, the fermentation techniques, equipment and conditions are not the same, resulting in different flavors of the beer. Generally, fermentation from below takes a longer time; fermentation from above is faster, but the beer has a shorter storage time. In recent years, based on scientific research, we gained a better understanding of the mechanisms of beer fermentation and improved the fermentation processes. Using "One Can Method", we simplified production processes, early and late fermentation stages are no longer strictly divided. Production time is shortened. This lowered both the cost of production and loss of beer in production process, achieving cost-saving by cutting labour and cleaning expenses.
