针对水产加工及日常消费中龙虾虾壳未能完全无害化资源化处理这一现状,本研究对龙虾虾壳中蛋白质的提取条件进行了探讨,以期获得龙虾虾壳资源化利用技术开发研究所需要的基础数据。我们采用氢氧化钠为主要反应试剂来提取龙虾虾壳蛋白质,对五种提取条件,即氢氧化钠浓度、反应时间、pH值、饱和氯化钠溶液投放量和盐析沉淀时间等分别进行了相关实验。结果表明,采用氢氧化钠为主要反应试剂提取龙虾虾壳蛋白质时,其最佳提取条件为氢氧化钠浓度15% ,反应时间5h,pH值4.5左右,饱和氯化钠溶液投放量50ml,盐析沉淀时间1h。在最佳提取条件下进行验证,结果表明龙虾虾壳蛋白质的回收率高达87.38%。
