研究现状：沙门氏菌的污染已对食品安全构成了严重威胁。鉴于沙门氏菌对人类健康的严重危害,目前世界各国政府已开始进行食品中沙门氏菌的风险评估工作,但大部分处于探索阶段。随着DNA和抗体技术的发展，近10～15年间发展了无数改进的沙门氏菌的检测方法，这些方法通称为快速检测。其中沙门氏菌的PCR快速检测具有敏感，特异，快速，简便和易于自动化等优点，因而从上世纪90年代开始利用该技术检测食品中以及临床样品和环境中的沙门氏菌。
研究意义：本研究系利用PCR技术对合肥市超级市场生鸭肝样中的沙门氏菌进行快速检测，旨在及时了解合肥市超级市场生鸭肝沙门氏菌的污染情况。从而对食品中的沙门氏菌进行风险评估,为今后开展其他食品、微生物的风险评估工作提供依据。
目的任务：应用聚合酶链式反应对60份生鸭肝样进行沙门氏菌的快速检测，并与常规法检测结果进行比较以及其他食品中沙门氏菌的检出率进行分析比较。
